Food for Friday! 5/21-6/3

Once again Price Chopper is offering triple coupons…I just wish that the stuff they had on sale were things that I normally purchase…It’s mostly prepackaged crap.  At least they do have a couple produce and meat coupons this week and I’m thankful I’ve been finding 75 cent off any milk coupons that PC has been accepting.  That helps with the fact that we go through about 3 gallons of milk in a little over a week!  I’ve been drinking more 1% milk thanks to the fact that I found a European formula Ovaltine that is soy free.  Tastes a little different from the chocolate milk I had been drinking, but adding a little sugar makes it good.

Here’s this editions menu.  I’ve had a hard time  this time around.  Nothing that we need or normally buy is on sale this week and it made it hard to plan for meals.  The thing that bugs me is that my grocery list is huge.  It’s mostly fresh fruits, veggies and meats, which means lots of $$.

WIP Wednesday – Hexes, Socks & Lima Beans

I’ve been busy with crafting over the last couple weeks.  I’ve been plugging away at the twin size Spring Flowers hexagon blanket.  I realized that my original calculation were slightly off.  The blanket is now the proper width (12 rows), but I’m going to need many more hexes than I figured to bring it to the proper length.  I’m currently at 130 hexes completed and crocheted together.  I figure that I need a total of 205 hexes to bring it to bedspread length.  I finished 15 hexes in the past couple days and have completed through the 2nd round on 10 more.  I haven’t been given a deadline to finish by, but I’m hoping to get it done before the end of the month.  I’ve only been working on it for 2 months now, which isn’t too bad considering the size of the project.

Here is an updated picture of it.  I’ve also been granted permission from the pattern creator to make blankets and sell them in my Etsy shop.  So, a big shout out and thank you to Jessie from Jessie at Home for creating a beautiful pattern!

Spring Flowers Hexagon Blanket

Since I finished 3 bibs for Sarandipity Handmade and I like to have a little traveling project with me, especially when I am sitting down at the school waiting for Bug to be released, (those bibs were great for that) I started on another pair of socks for myself for Mother’s Day.  I’m following the same vanilla pattern that I used for the other 2 pairs I made, but I’m doing my heel and toe a bit differently, following a pattern in a book I borrowed from the library.

And, I’ve realized that my diet is still a work in progress, too.  I’ve been doing so well, nearly another month soy free without an issue until Monday night when I ate lima beans with dinner.  According to some research  lima beans (as well as other legumes) can trigger the same effect if you have an issue with soy.  So, until then I’m avoiding lima beans.  I’m thankful I don’t have issue with green beans, kidney beans or peas, cause we eat those all the time.

I’ve got so many ideas floating around in my head, but I’m hoping to finish one of the 2 projects I’ve got going before starting more…though I’m sure I’ll probably pick up another small project before all is said and done…that’s just how I am!  lol

Two Month Soy Update

I looked back through my old blog posts and realized that I’ve been off soy for over 2 months and haven’t had any stomach trouble since I had a reaction to the strawberry cake I made for Bug’s birthday at the beginning of February.  I think I’ve figured out what that was all about.  There was no soy involved yes, but my stomach hadn’t healed from the damage I’d previously inflicted my body reacted to the butter.  Since then I haven’t had any issues with butter.  This means that maybe I can start making cookies again (provided the other ingredients are soy free) with butter rather than shortening!  Yay!  Happy Dance!  I’ll eventually (hopefully) blog about it, but I recently made homemade crescent rolls (from scratch) with a lot of butter and eaten quite a few of them without issue.  The recipe I used needs  little tweaking, but hopefully I’ll have it right before tomorrow night as I’m making several dozen to bring to Easter dinner at Darling Hubby’s Grandpa’s house on Sunday.

So, what have I been eating?  Well, I’m still making my own homemade breads.  I’ve learned to make 2 one pound loaves of white bread at a time using my bread machine for the dough and then baking it in my oven.  I freeze one and slice the other for immediate consumption.  It’s so good!  I generally have 2 slices for breakfast with a cup of Rooibos (African – pronounced roy boss) tea with honey, often topped with orange marmalade or kerrigold irish butter.  Yum!  Sometimes for lunch I’ll make a Fluffernutter sandwich (made with Peter Pan PB and the original marshmallow fluff) with banana and honey.  Yum!  I’ve been eating  a lot of fresh fruit – plums, nectarines, bananas, grapes, strawberries.  We always have a veggie with dinner.  I’ve also started finding new ways to cook potatoes and I’ve been making myself sweet potato fries, too.  I’ve found a brand of panko bread crumbs that are soy free – only one of about 7 different bread crumb brands on the shelf!), so I’ve been making my own breading for chicken and fish (yes, I’ve started buying fresh fish from the fish counter rather than the dried out or greasy soy laced battered things that come in a box.)

I’m still making my own taco seasoning and seasonings for chili and all my meats. And, just cause it’s less fat, I’ve been rinsing my browned ground beef before I add seasoning or put it in my other dishes.  It cuts down on the amount of fat that my family is ingesting.  We’re still eating a lot of pasta.  It’s yummy and everyone eats it, either with homemade spaghetti sauce or plain with just butter and sprinkle cheese.  I also make my own homemade pizza dough, topped with my own seasoned tomato sauce, turkey pepperoni and skim milk cheese.  I only use olive oil or corn oil, now, as well.

Oh, we’ve even been making our own homemade bagels.  Darling Hubby usually has a bagel with cream cheese for breakfast and since I’m soy free I can’t have the bagels from the grocery store.  I found a simple recipe in my bread machine book and we’ve made several batches.  It took a bit of time for us to really figure it all out, but now it’s easy, though time consuming, to make homemade bagels.  Darling Hubby enjoys Asiago cheese bagels, so that’s what we’ve been making as of late.

I’ve found a few treats for myself that are soy free.  I found some yummy sweet potato and beet chips (I think the brand was Terra) and even some kosher for Easter chocolate chips that have no unnecessary ingredients.   The grocery store decided to no longer carry my Equal Exchange organic chocolate bars, so I no longer have those to snack on.  They were delish!  Oh, and the No Pudge! brownie mix, made with only good stuff is yummy made with Stonyfield’ No Fat French Vanilla yogurt.  Oh, and we bought an air pop popcorn popper so we can make batches of fresh popcorn for snacks and always for movie night!  Both my kids can polish off an entire bowl of popcorn all on their own!  lol  They love their popcorn!

So, there you have it.  The things I’ve figured out while on a soy free diet.  It just takes a little consistency and several days of eating the same thing over and over til you find what works, but it can be done!

Early Edition! Food for Friday! 3/26 – 4/8

I got a super early start on my grocery list/menu this week.  Mostly because I listened to the Coupon Lady on WGNA this morning on my way home from dropping Bug off at school.  I’m still looking for the .75 cents off any gallon of milk coupon she mentioned, though.  She pointed out that Price Chopper is now accepting competitors coupons (like from Target and Walmart) and I went on a search to find coupons for items that I could use this week.  I’m not sure if Price Chopper will allow one competitor’s store coupon and a manufacture’s coupon like they do with their own store coupons, but I’m trying to find out.  According to the Coupon Lady, they do accept both, but the policy written on their website indicated they do not.  I’ll update when I find out.  Update: They do not accept both.  :(   I was really hoping they did cause I’ve got some Target coupons and manufactures coupons for things I’d like to use together!  I’m really trying to stay well under budget this week.  I think so far I’ve got about $20 in coupons and e-coupons, plus whatever advantage savings I get from sale items.

I’m still continuing to make dinners without soy, which, I’m sure I’ve said before, makes my grocery bill higher.  It’s been nearly 2 months that I’ve been off soy and I haven’t had even the slightest twinge of my usual stomach pain and I’ve even found that I wake up in the morning without that queasy feeling I so often had.  There are still the occasional things that I’ll make for the boys or for Darling Hubby that contain soy, but I just avoid them.  I mostly do this since we still have the things in the pantry or the freezer and I want to use them up.

I’m trying some new recipes this time.  A few weeks ago, I made the Skinny Chicken Parm and it was delish!  Definitely a keeper recipe!  The Italian Chicken Bake, on the other hand, left a lot to be desired in my book.  It took longer than necessary to cook and just wasn’t what I was expecting…well, they can’t all be keepers.

This time around I’m trying (and modifying) a Cheesy Pot Pie recipe to be soy free and making it into a shepherd’s pie.  I’m going to make the Velveeta filling with the ground beef and instead of using the canned crescent rolls, I’m going to use mashed potatoes instead.

I’m also trying out a Pinterest recipe called Crescent Chicken which is chunks of chicken and cheese rolled up in a crescent roll.  I’m going to make my own crescent rolls (hopefully I’ll have the recipe down as I’m making several dozen to bring to Easter Dinner this weekend so I know I’ll be able to eat one thing at the family gathering.  lol) and I’ve found an organic cream of chicken soup that is soy free.  And, speaking of making my own bread, I’ve still got to make the homemade hamburger buns.  Fingers crossed they come out well!

Food for Friday! 3/26 – 4/8

Welcome to the late Saturday edition of Food for Friday.  lol  Trying to come up with a grocery list was kinda tough this week since there was really nothing that we buy on sale.  I hate when that happens…cause I usually end up spending a lot more than normal.  I ended up spending almost $270 when my budget is between $200 and $250.  Before coupons and sale discounts I was up over $300!  Course I did end up buying things that we normally don’t like $33 in flea drops for the dogs and cat, $18 for a huge container of olive oil and $16 for a big container of real maple syrup.

It’s even tougher now that I’m still avoiding soy…I have to make changes to recipes or buy more expensive items.  I’m making due, though.  I’ve been soy free and low fat for over a month now and I haven’t had any stomach pain, which is nice.  I have been branching out and trying a few things with soy lecithin in it and so far that hasn’t bothered me.  I’m convinced it’s an oil thing as some people can handle lecithin and not the oil.  Either way, I’m feeling a lot healthier now that I’m eating more homemade things without preservatives and giving up the junk food.

Food for Friday! 2/27 – 3/11

So, this is a couple days late…I was having some issues with my computer and wordpress not working well together on Friday when I was attempting to write this.  I figured I’d bang this out quick while waiting for my yeast to warm up so I can make the bread for tonight’s Craft Night meal.  lol

I’ve been on a homemade, from scratch kick lately since I’ve been cutting out the soy and artificial and natural flavors and trying to avoid most preservatives/additives if I can.  I’ve been making homemade bagels (it’s not as hard as it sounds!), fresh baked white bread, and I even made homemade meatballs and froze them for later meals!  I also discovered (for those of you who don’t want to or don’t have time to make your own breads at home) that our grocery store offers a brand of bread from The Heidelburg Baking Company that is soy free and free of all those additives and preservatives! (It says right on the package it should be refrigerated.)  They offer flax seed, multigrain, oat, cracked wheat and even a French Peasant bread!  At my Price Chopper, they run about $4.50 a loaf (roughly 2.99/lb).  I haven’t tried them, but it is available, which is nice!

Oh, I did find, in my grocery store travels, that there is a brand of brownie mix called No Pudge!  I tried the Original flavor, which is fat free (bonus) and contains nothing but good stuff..no additives or preservatives!  There are other flavors, but check the ingredients!  You just add 2/3 of cup of yogurt (I used 1/2 of a cup of Stonyfield’s No Fat French Vanilla (6oz container) and an egg white since I didn’t have enough yogurt – this is an alternate direction on the box.)  I’m sure you could probably use some strawberry yogurt and a little vanilla to make different flavors.

And, since I’m a chocolate lover and avoiding the soy lecithin in chocolate has been tough, I’ve been searching high and low for something chocolate without all the extra crap.  I stumbled over a brand of chocolate bars in the organic section from a  co-op company called Equal Exchange.  I’ve only tried their dark chocolate with a hint of hazelnuts and OMG!  It’s so good and doesn’t bother my tummy!  <3  Love!  Plus, I get to eat 8 squares at a time for a serving and that gives me 3 servings per bar!  It is expensive, but I’m finding that the safe foods and the additive free ones are.  I just have to suck up the cost if I want to be happy!  lol

Soy Free Update

So I’m still sticking with the soy free diet and things are going swimmingly.  I’ve had a few run-ins with some natural flavoring and some issues with butter, but aside from that, I’ve been feeling great!  My moods are still better, I’m clearer headed, and my heart palpitations have declined greatly…My weight has stabilized at around 135lbs (I’m only about 15lbs heavier than I was at my high school graduation).  I’ve also found a few friends who are possibly in the same boat with soy who are joining me on the soy free experiment bandwagon.  Not that I want someone to have a food allergy, but it feels good to not be alone and it feels good to be able to help someone else out.

I’ve also had some run-ins with some well meaning friends who, in a push to be helpful, practically cornered me (or so it felt) on my facebook page and were cramming the whole “gloom and doom, get to a doctor NOW!” stuff down my throat.  I did take a stand and asked them nicely to back off as I was feeling pretty bullied and yelled at and they turned around, kicked it up a notch and pretty much lambasted me for posting about my “ailments” and told me that I shouldn’t post if I didn’t want the comments.   Basically a blame the victim kinda thing.   “Well, she asked for it!”  I wonder if I should start commenting on my friends statuses who always talk about drinking/partying/getting wasted and ask if they need to go to an AA meeting.  Apparently, I post about my health too much and that warrants an inquisition about why I won’t see a doctor.  Maybe those drinking statuses are a cry for an alcoholic intervention…It’s the pot calling the kettle black, really.  In hindsight, I made the mistake of posting about my health on my wall and I’m not going to do that anymore.  Lesson learned.  Oh, and I’m sure I just pissed someone off… :)

I’m one of those stereotypical facebookers who post about exactly what they are doing/feeling, etc.  I don’t do it to get comments or pity.  I’m not a troll.  I just put stuff out there.  Most of the time my posts revolve around my knitting or housework and what I’ve accomplished or plan to accomplish for the day.  Same for this blog.  I just write and if my day to day stuff and experiences help others, great, if someone comes here and can offer help to me, even better.  I’m not just posting to get people to visit my blog.  Do I like to see my blog stats go up, yes, because I can only hope that my blog has been, in some way, helpful to those visitors.  I just feel like I’ve lost an outlet for my thoughts.

Anyway, I’ve learned a few more things though trial and error. Most of the teas in my cupboard contain soy lecithin or natural flavors.  I’m down to 2-3 boxes out of the like 8 that are in there.  I’m bummed because I can no longer have the buffalo wing sauce that’s in my fridge.  I love buffalo wings and spicy stuff…Also, antacids contain natural flavors and have a tendency to make my stomach hurt and my heart pound on top of the indigestion….yeah, won’t make that mistake again.  lol  I’ve learned that benedryl helps if I have accidentally eaten something with soy or butter.  Good to know!  I’ve also learned that the hand lotion I’ve been using contains soybean oil.  Nice.  At least I know that it’s not a contact allergy/sensitivity.  I’ve been using the lotion every day since I’ve cut out eating soy and I haven’t noticed any ill feelings or rashes.  I am going to find a soy free lotion as I have terribly dry hands in the winter and I have to put lotion on regularly or my hands will crack and bleed.  I’m slightly germophobic, so I’m always washing my hands and that doesn’t help the dryness.

At some point I have to post about my knitting and Bug’s birthday and birthday party from this past weekend.  I also plan to post about the soy free strawberry cake from scratch that I made…though this cake ended up bothering me…probably from the butter – it used 2 sticks!   I know it wasn’t the homemade meringue frosting as the night before the party I was eating it while decorating the cake and I was fine.  Either way, the cake was delicious, despite it’s density (it was more fudge brownie like than cake like) and the fact that it made my stomach hurt.

So, that’s the update for this week.  I’m continuing to improve and I’m happy about that.  Yay for good things!
